Grilled Chicken Fiesta Platter, inspired by Avila’s El Ranchito in Laguna Beach.
- Lime, Lime zest, and garlic marinated Chicken breasts, grilled and then cubed
- Stir-fried Bell Peppers, Red Onion, Mushrooms, Green Onion, Zucchini
- Add grilled Chicken back into the pan with the veggies once they are about done
- Season with Salt, Pepper, Soy Sauce, Worcestershire sauce, California Chili powder, and also a little Tapatio hot sauce
- Garnish with grilled corn/black bean relish with cilantro (not pictured)
Super healthy and flavorful. The secret is the Worcestershire and California Chili Powder and the little bit of low-sodium Soy Sauce. Way better flavor alternatives than butter. And only a little bit of oil to stir-fry. Not olive-oil tho, it will burn.
